The ultimate summer salad with fresh bursts from grapes and cherry tomatoes.
Serves: 1
Ingredients
- 90g chicken, baked/boiled and cubed
- 1 stalk celery, chopped
- ½ cup grapes, seedless and halved
- 2 tbsp (20g) pecans, chopped
- 12 cherry tomatoes, halved
- 2 cups romaine lettuce
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt & pepper
Method
- In a serving bowl, arrange cooked chicken, celery, grapes and tomatoes on top of the lettuce.
- In a small bowl, whisk olive oil, balsamic vinegar, salt and pepper.
- Garnish the salad with the chopped pecans then drizzle with the dressing. Serve and enjoy.
* For vegetarian option, replace chicken with 80-90g firm tofu.
