Summer chicken salad

The ultimate summer salad with fresh bursts from grapes and cherry tomatoes.

Serves: 1

Ingredients

  • 90g chicken, baked/boiled and cubed
  • 1 stalk celery, chopped
  • ½ cup grapes, seedless and halved
  • 2 tbsp (20g) pecans, chopped
  • 12 cherry tomatoes, halved
  • 2 cups romaine lettuce
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper

Method

  1. In a serving bowl, arrange cooked chicken, celery, grapes and tomatoes on top of the lettuce.
  2. In a small bowl, whisk olive oil, balsamic vinegar, salt and pepper.
  3. Garnish the salad with the chopped pecans then drizzle with the dressing. Serve and enjoy.

* For vegetarian option, replace chicken with 80-90g firm tofu.
