Quick pasta salad

Serves: 2

Ingredients

  • ¼ cup wholemeal penne pasta (use gluten free as an option)
  • 1 cup broccoli, chopped
  • 1 yellow or red capsicum, chopped
  • ½ carrot, chopped or diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup olives, sliced
  • ½ cup chickpeas, drained

For dressing:

  • 1 tbsp olive oil
  • 2 tbsp parsley, chopped
  • 1½ tbsp lemon juice
  • Salt and pepper

Method

  1. Cook pasta according to packet instructions. Set aside and cool.
  2. Whisk all dressing in a small bowl. Season to your liking.
  3. Combine all vegetables and the cooked pasta in another bowl. Pour over the dressing and mix well to coat. Serve immediately or chilled. Enjoy!
