Ingredients
- ¼ cup wholemeal penne pasta (use gluten free as an option)
- 1 cup broccoli, chopped
- 1 yellow or red capsicum, chopped
- ½ carrot, chopped or diced
- ½ cup cherry tomatoes, halved
- ¼ cup olives, sliced
- ½ cup chickpeas, drained
For dressing:
- 1 tbsp olive oil
- 2 tbsp parsley, chopped
- 1½ tbsp lemon juice
- Salt and pepper

Method
- Cook pasta according to packet instructions. Set aside and cool.
- Whisk all dressing in a small bowl. Season to your liking.
- Combine all vegetables and the cooked pasta in another bowl. Pour over the dressing and mix well to coat. Serve immediately or chilled. Enjoy!
