Greek-style chicken salad with pita chips

Ingredients

  • 1 wholemeal or gluten free pita bread
  • ½ cup (70g) skinless chicken breast
  • 1 cup (50g) cos lettuce
  • 1 (120g) medium tomato
  • ¾ cup (100g) Lebanese cucumber
  • 1 small (50g) red capsicum
  • ⅓ cup (50g) onions
  • 2 tbsp (20g) olives
  • 1 tbsp (20g) low fat feta
  • 1 tbsp balsamic vinegar
  • ½ tbsp olive oil

Method

  1. Preheat the oven to 200C. Cut the pita into 8 wedges. Bake in the oven for 10-12 minutes or until just crispy.
  2. Poach the chicken for 10-12 minutes or until cooked. Rest for 5-10 minutes and then slice thinly.
  3. Separate the lettuce leaves, chop tomatoes, cucumber and capsicum into 2cm cubes. Slice onion and olives thinly and toss together.
  4. Add the chicken, crumble feta on top and dress with vinegar and oil. Add salt and pepper to taste. Serve with pita chips.
