Ingredients
- 1 wholemeal or gluten free pita bread
- ½ cup (70g) skinless chicken breast
- 1 cup (50g) cos lettuce
- 1 (120g) medium tomato
- ¾ cup (100g) Lebanese cucumber
- 1 small (50g) red capsicum
- ⅓ cup (50g) onions
- 2 tbsp (20g) olives
- 1 tbsp (20g) low fat feta
- 1 tbsp balsamic vinegar
- ½ tbsp olive oil
Method
- Preheat the oven to 200C. Cut the pita into 8 wedges. Bake in the oven for 10-12 minutes or until just crispy.
- Poach the chicken for 10-12 minutes or until cooked. Rest for 5-10 minutes and then slice thinly.
- Separate the lettuce leaves, chop tomatoes, cucumber and capsicum into 2cm cubes. Slice onion and olives thinly and toss together.
- Add the chicken, crumble feta on top and dress with vinegar and oil. Add salt and pepper to taste. Serve with pita chips.
