Ingredients
- 1 apple
- ¼ lemon
- 1 tsp ground cinnamon
- 1 large egg
- 3 egg whites
- 50ml non-fat milk
- 2 tbsp ricotta
Method
- Place the apple slices, lemon juice and cinnamon in a bowl. Mix well to combine. Set aside.
- Heat a non-stick frying pan and add the apple mixture. Stir fry until the apple slices begin to soften. Remove from heat and set aside.
- Whisk the eggs and milk together. Heat a non-stick frying pan and pour in the egg mixture. As the omelette sets use a spatula to gently lift the omelette and allow any runny egg mixture to spread onto the pan and cook. Just before the omelette is cooked, place the apple mixture in the middle of the omelette and fold the edges together so that the apple slices are enclosed in the omelette. Continue to cook until eggs are firm.
- Serve the omelette topped with ricotta cheese. Enjoy.
