Beef and quinoa protein bowl

Enjoy a hearty grilled sirloin steak paired with fluffy quinoa, fresh tomatoes, crisp cucumbers, fragrant basil, and zesty shallots. Drizzle with olive oil, sprinkle salt and pepper, and you’ve got a delicious, fuss-free dish that’s sure to satisfy.

Serves: 2

Ingredients

  • 225g sirloin steak
  • 1 ¼ tsp olive oil
  • 1 cup quinoa, cooked
  • To serve
  • 1 cup tomatoes, small dices
  • 1 cup cucumbers, round sliced
  • 2 tbsp shallots, chopped
  • 5 basil leaves
  • Salt and pepper to taste

Method

  1. Pre-heat grill to medium. Rub 1 teaspoon of olive oil over both sides of steak. Season with salt and pepper. Place on grill and cook on each side for 5 minutes for medium well done. Remove the steak from the grill and set aside then thinly slice.
  2. Place quinoa into a bowl and top it with the steak slices.
  3. Put in the cucumber, tomato, basil and shallots then drizzle with olive oil and season with salt and pepper. Serve and enjoy.
