Ingredients

  • 6g protein powder
  • ⅓ tsp baking powder
  • ½ tsp ground cinnamon
  • 1 pinch of salt
  • 25g banana
  • 20ml almond milk
  • 8g dates
  • 20g rolled oats
  • ¼ tsp vanilla extract

Method

  1. Blend oats until fine.
  2. Ensure dates are pitted, then mash.
  3. Preheat oven to 175°C.
  4. In a bowl add the dates, almond milk and vanilla. Mix until well combined.

In a separate bowl add the protein powder, baking powder, salt, oats and cinnamon. Mix until well combined. Stir in the almond milk mixture, mashed banana and half the oil spray and mix well.

Spray a single cup in a muffin tray or a small ramekin with the remaining olive oil. Pour in the batter. Bake in the oven for approximately 30 minutes, checking regularly to avoid burning. Insert a knife in the centre of the bread and when it comes out clean the bread is ready. Rest and allow to cool for 5 minutes. Serve and enjoy.
