Looking for a quick and easy way to get your veggie fix? This delicious and nutritious salad is a go-to for those evenings when you don’t feel like cooking. Simply chop your veg and pop in the oven – voilà!
Ingredients
- 1 cup corn kernels
- 1 large (300g) zucchini
- 1 (200g) red capsicum
- ⅓ cup (50g) red onion
- ¼ tbsp extra virgin olive oil
- 1/2 tsp chilli flakes
- 1 tbsp (10g) almonds
- 1 tbsp (10g) sesame seeds
* Add a cup of rocket, lettuce or steamed broccoli/cauliflower as a side
Method
- Preheat the oven to 180°C.
- Cut zucchini, capsicum and onion into 2-3cm cubes.
- Lay the vegetables on a medium size baking tray lined with baking paper.
- Sprinkle the vegetables with salt (to taste) and chilli flakes (to taste) and bake for about 20-25 minutes or until they just begin to brown.
- Remove from the oven and cool slightly.
- Toss the baked vegetables with nuts and seeds and drizzle with olive oil. Serve.
Double the recipe to make enough for the next day!
