Baked vegetable salad with chilli and nuts

Looking for a quick and easy way to get your veggie fix? This delicious and nutritious salad is a go-to for those evenings when you don’t feel like cooking. Simply chop your veg and pop in the oven – voilà!

Ingredients

  • 1 cup corn kernels
  • 1 large (300g) zucchini
  • 1 (200g) red capsicum
  • ⅓ cup (50g) red onion
  • ¼ tbsp extra virgin olive oil
  • 1/2 tsp chilli flakes
  • 1 tbsp (10g) almonds
  • 1 tbsp (10g) sesame seeds

* Add a cup of rocket, lettuce or steamed broccoli/cauliflower as a side

Method

  1. Preheat the oven to 180°C.
  2. Cut zucchini, capsicum and onion into 2-3cm cubes.
  3. Lay the vegetables on a medium size baking tray lined with baking paper.
  4. Sprinkle the vegetables with salt (to taste) and chilli flakes (to taste) and bake for about 20-25 minutes or until they just begin to brown.
  5. Remove from the oven and cool slightly.
  6. Toss the baked vegetables with nuts and seeds and drizzle with olive oil. Serve.

Double the recipe to make enough for the next day!
