Baked quinoa and vegetable slice

A quick and easy recipe to get your veggie fix. Simply throw it all together into a bowl and bake!

Serves: 1

Ingredients

  • ¼ cup baby spinach
  • ¼ medium brown onion
  • ½ garlic clove
  • ¼ medium zucchini
  • 1 small carrot
  • ¼ medium red capsicum
  • ¼ cup sundried tomatoes
  • 3 tbsp low-fat cottage cheese
  • 2 large egg whites
  • ½ tbsp olive oil
  • ¼ tsp oregano Leaves
  • ¼ tsp dried thyme
  • 4 tbsp quinoa

Method

  1. Chop onion, capsicum and zucchini. Grate carrot and crush garlic.
  2. Whisk the egg whites.
  3. Preheat oven to 180°C.
  4. Drain the sun-dried tomatoes (if required) and dice.
  5. Cook the quinoa as per packet instructions. Drain well.
  6. In the meantime, spray a non-stick frying pan with half the olive oil spray and stir-fry the vegetables and garlic until cooked.
  7. Place the cooked vegetables and quinoa into a bowl, along with the thyme, oregano, cottage cheese and eggs. Stir to combine. Season with salt and pepper.
  8. Spray a baking dish or tin with the remaining olive oil and pour the quinoa and vegetable mixture into the baking dish or tin. Bake for 60 minutes or until set. Serve while hot.
