Protein mug cake

Satisfy your sweet tooth cravings with a delightful chocolate protein mug cake! Simply mix protein powder, cocoa, and flour with eggs, milk, and a dash of sweetness.

Serves: 1

Ingredients

  • 1 scoop protein powder (30-35g)
  • 1 tbsp coconut flour (or regular flour)
  • 1 tbsp sweetener/honey/maple syrup
  • ½ tsp baking powder
  • 1 large egg
  • 1 ½ tbsp cocoa powder
  • ¼ cup milk of choice
  • 1 tbsp choc chips/ nuts (additional of choice)

Method

  1. Grease or spray a large mug or small bowl and set aside.
  2. In a mixing bowl, combine protein powder, flour, baking powder sweetener and cocoa- mix well.
  3. In a separate bowl, whisk the egg and milk and pour the wet mixture into the dry mixture, and stir until fully incorporated. Top with choc chips/ nuts if desired.
  4. Microwave for 60-90 seconds, or until the cake has cooked to your preference.

Hot tip: if you don’t own or want to use a microwave, you can also oven bake for 10-12 mins at 280°C.

Vegan option: swap 1 egg for ‘flax egg’. To make, combine one tablespoon of flaxseed meal and three tablespoons of water and allow to sit for about 5 minutes.
