This Japanese inspired dish uses both salmon and watercress – two amazing superfoods to supercharge your wellbeing.

Ingredients
- ½ tbsp miso paste
- 1 tsp hot water
- ½ (100g) salmon fillet
- 1 tbsp tamari sauce
- 2 tbsp chives
- 1 tsp unsalted peanuts
- ½ lime
- ½ tsp chilli flakes
- 1 tsp lemongrass paste
- ¼ packet buckwheat soba noodles
- 1 cup watercress
Method
- To make the marinade for the salmon, mix together the miso paste and hot water. Brush the salmon fillet with the marinade, cover with foil and set aside in the fridge.
- Cook the noodles as per instructions. Drain well, place in a bowl and set aside to cool.
- Add the tamari sauce, chives, peanuts, chilli flakes, lemongrass and half the lime juice to the noodles. Mix well.
- To cook the salmon, preheat a grill to high and cook the salmon under the grill for 3-4 minutes each side or until crisp on the outside and cooked through.
- Place the salmon on a bed of chilli lime noodles and top with watercress. Serve with the remaining lime wedge.
*Make sure you check the ingredients as some companies can add wheat flour.
