Miso salmon with chilli lime soba noodles

This Japanese inspired dish uses both salmon and watercress – two amazing superfoods to supercharge your wellbeing.

Serves: 1

Ingredients

  • ½ tbsp miso paste
  • 1 tsp hot water
  • ½ (100g) salmon fillet
  • 1 tbsp tamari sauce
  • 2 tbsp chives
  • 1 tsp unsalted peanuts
  • ½ lime
  • ½ tsp chilli flakes
  • 1 tsp lemongrass paste
  • ¼ packet buckwheat soba noodles
  • 1 cup watercress

Method

  1. To make the marinade for the salmon, mix together the miso paste and hot water. Brush the salmon fillet with the marinade, cover with foil and set aside in the fridge.
  2. Cook the noodles as per instructions. Drain well, place in a bowl and set aside to cool.
  3. Add the tamari sauce, chives, peanuts, chilli flakes, lemongrass and half the lime juice to the noodles. Mix well.
  4. To cook the salmon, preheat a grill to high and cook the salmon under the grill for 3-4 minutes each side or until crisp on the outside and cooked through.
  5. Place the salmon on a bed of chilli lime noodles and top with watercress. Serve with the remaining lime wedge.

*Make sure you check the ingredients as some companies can add wheat flour.
