Satisfy your tastebuds and bring an abundance of colour and flavour to the table with this quick and delicious recipe. Perfect for summer nights when you want something yummy and easy.
Ingredients
- 1 tbsp mashed avocado
- ⅓ garlic clove, crushed
- ⅓ tbsp chopped fresh parsley
- ¼ medium lemon, juiced
- 3 tbsp (35g) raw wild rice
- 1 medium corn cob
- ¾ cup frozen peas
Method
- Combine the avocado, crushed garlic, parsley and lemon juice in a small bowl and mix well. Set aside.
- Cook the rice per packet instructions. Drain well.
- In the meantime, place the corn cob in a saucepan and cover with water. Bring the water to a boil and simmer for 4-5 minutes. Add the frozen peas to the saucepan. Bring back to the boil for a further 2-3 minutes or until the peas and corn are tender. Drain the corn and the peas.
- Smash the peas with a potato masher or fork. Once mashed, add the avocado mixture and wild rice. Stir to combine.
- Serve the smashed peas and rice with the corn cob on the side. Season with cracked black pepper. Enjoy.
