The best baked salmon recipe ever
Ingredients
- ⅓ cup (80g) salmon
- 5 tbsp (55g) microwavable brown rice
- 1 tsp honey
- ½ tbsp soy sauce
- 2 tsp grated ginger
- 1 ¼ cup (90g) bok choy
- ¾ cup (90g) broccolini
- ½ tbsp olive oil
Method
- Preheat oven to 180 degrees Celsius. Add salmon to baking tray lined with aluminium foil.
- Mix honey, soy sauce and ginger in small bowl. Pour over salmon, enclose with aluminium foil and bake for 15 minutes or until cooked to your liking.
- Meanwhile, heat olive oil in non-stick fry pan over medium heat. Add broccolini and 1 Tb of water and cook stirring for 4 minutes. Add bok choy and brown rice cook for a further 2 minutes. Season with salt and pepper and serve alongside salmon.
Tip: double the recipe to make enough for your lunch the next day!
