Beef Tacos
Ingredients
- 400 grams minced beef
- 1 diced onion
- 1 tbs Mexican seasoning
- Mixed lettuce leaves
- 1 diced tomato
- 1 avocado
- 1 lime
Method
- Brown the mince in a pan on medium/high heat.
- Add onion and Mexican seasoning to mince mixture.
- Mix together until mince is completely cooked through.
- Add mince mixture to soft taco wraps.
- Top with mixed lettuce leaves, diced tomato, guacamole and a squeeze of lime.
Black Bean & Sweet Potato Tacos
Ingredients
- 4 cups diced sweet potato
- 1 diced onion
- 1 tbs Mexican seasoning
- 400 grams of black beans
- ½ cup grated low-fat cheese
- Handful finely chopped cilantro (coriander)
Method
- Add sweet potato, onion and Mexican seasoning to a pan.
- Cook together in pan on medium/high heat until softened.
- Add sweet potato mixture to soft taco wraps.
- Top with black beans, cheese and cilantro.
Chicken Lime Tacos
Ingredients
- 4 limes
- 1 tbs Mexican seasoning
- 2 cloves of garlic, finely chopped
- 450 grams of chicken breast, diced
- Half a red cabbage, finely sliced
- 1 avocado
- 200 grams low-fat cottage cheese
Method
- Squeeze the juice of 4 limes into a bowl.
- Add Mexican seasoning and garlic to the bowl and stir well.
- Add lime marinade mixture to diced chicken and stir well to ensure all chicken is covered.
- Cook chicken in pan on medium/high heat until golden.
- Add chicken to soft taco wraps.
- Top with red cabbage, guacamole and cottage cheese.
