From beef to chicken to veg, we've pulled together three delicious taco recipes for your next cook up.

 

Beef Tacos

Ingredients

  • 400 grams minced beef
  • 1 diced onion
  • 1 tbs Mexican seasoning
  • Mixed lettuce leaves
  • 1 diced tomato
  • 1 avocado
  • 1 lime

Method

  1. Brown the mince in a pan on medium/high heat.
  2. Add onion and Mexican seasoning to mince mixture.
  3. Mix together until mince is completely cooked through.
  4. Add mince mixture to soft taco wraps.
  5. Top with mixed lettuce leaves, diced tomato, guacamole and a squeeze of lime.

Black Bean & Sweet Potato Tacos

Ingredients

  • 4 cups diced sweet potato
  • 1 diced onion
  • 1 tbs Mexican seasoning
  • 400 grams of black beans
  • ½ cup grated low-fat cheese
  • Handful finely chopped cilantro (coriander)

Method

  1. Add sweet potato, onion and Mexican seasoning to a pan.
  2. Cook together in pan on medium/high heat until softened.
  3. Add sweet potato mixture to soft taco wraps.
  4. Top with black beans, cheese and cilantro.

Chicken Lime Tacos

Ingredients

  • 4 limes
  • 1 tbs Mexican seasoning
  • 2 cloves of garlic, finely chopped
  • 450 grams of chicken breast, diced
  • Half a red cabbage, finely sliced
  • 1 avocado
  • 200 grams low-fat cottage cheese

Method

  1. Squeeze the juice of 4 limes into a bowl.
  2. Add Mexican seasoning and garlic to the bowl and stir well.
  3. Add lime marinade mixture to diced chicken and stir well to ensure all chicken is covered.
  4. Cook chicken in pan on medium/high heat until golden.
  5. Add chicken to soft taco wraps.
  6. Top with red cabbage, guacamole and cottage cheese.
