This choc and almond butter quinoa recipe is our take on a nutty, seedy, chocolate 'cheesecake' pudding.

Serves 1


  • 17g raw quinoa, rinsed
  • 1 tbsp cacao powder
  • 10g 100% almond butter
  • 2 ½ g vanilla bean/pod, seeds removed and set aside
  • 130g low-fat cottage cheese


  1. Cook the quinoa as per packet instructions. Drain well.
  2. Place the cooked quinoa in a bowl while still hot. Add the raw cacao powder, almond butter, vanilla seeds and cottage cheese to the bowl and mix well to combine.
  3. Serve and enjoy.
