This choc and almond butter quinoa recipe is our take on a nutty, seedy, chocolate 'cheesecake' pudding.
- 17g raw quinoa, rinsed
- 1 tbsp cacao powder
- 10g 100% almond butter
- 2 ½ g vanilla bean/pod, seeds removed and set aside
- 130g low-fat cottage cheese
- Cook the quinoa as per packet instructions. Drain well.
- Place the cooked quinoa in a bowl while still hot. Add the raw cacao powder, almond butter, vanilla seeds and cottage cheese to the bowl and mix well to combine.
- Serve and enjoy.
