Looking for a new healthy snack recipe? These chilli veggie balls tick all the boxes for a healthy, delicious and easy to make snack.

Serves: 1

 

Ingredients

  • 75g cauliflower
  • 100g broccoli
  • 1 egg
  • 20g breadcrumbs
  • 10g Parmesan cheese
  • ½ tsp chilli powder
  • ½ garlic clove

Method

  1. Preheat oven to 190°C.
  2. Steam the broccoli and cauliflower until they are cooked but still slightly crisp.
  3. Add the cauliflower and broccoli to a food processor and process until combined.
  4. Add the egg, breadcrumbs, parmesan cheese, chilli flakes and garlic to the broccoli mixture and pulse until combined.
  5. Line a baking tray with baking paper. Scoop balls of the broccoli mixture onto the tray. Bake for about 15 minutes or until golden brown. Serve warm or cold and enjoy.
