Wholesome and delicious buckwheat pancakes with berries, perfect for a weekend breakfast. This recipe, and stacks more, are available via MyFernwood!
- 1 small egg
- 2ml milk
- 40g buckwheat flour
- ½ tsp baking powder
- ½ tbsp olive oil
- 40g ricotta cheese
- 10g honey
- 100g blueberries or other berries
- In a medium bowl, whisk egg and milk together. Add flour and baking powder and mix until combined.
- Heat the oil in a small pan, add 1/4 of pancake batter and cook on each sides for 1-2 minutes. Repeat with remaining batter.
- Serve pancakes with ricotta, berries and honey. Enjoy!
