Wholesome and delicious buckwheat pancakes with berries, perfect for a weekend breakfast. This recipe, and stacks more, are available via MyFernwood!

Serves: 1


  • 1 small egg
  • 2ml milk
  • 40g buckwheat flour
  • ½ tsp baking powder
  • ½ tbsp olive oil
  • 40g ricotta cheese
  • 10g honey
  • 100g blueberries or other berries


  1. In a medium bowl, whisk egg and milk together. Add flour and baking powder and mix until combined.
  2. Heat the oil in a small pan, add 1/4 of pancake batter and cook on each sides for 1-2 minutes. Repeat with remaining batter.
  3. Serve pancakes with ricotta, berries and honey. Enjoy!
