Wholesome and delicious pancakes with berries, perfect for your weekend breakfast in bed. Increase the recipe quantities to share this meal with your partner or family! This recipe, and stacks more (pun intended), are available via MyFernwood!

Serves: 1

Ingredients

  • 1 small egg
  • 2ml milk
  • 40g buckwheat flour
  • ½ tsp baking powder
  • ½ tbsp olive oil
  • 40g ricotta cheese
  • 10g honey
  • 100g blueberries or other berries

Method

  1. In a medium bowl, whisk egg and milk together. Add flour and baking powder and mix until combined.
  2. Heat the oil in a small pan, add 1/4 of pancake batter and cook on each sides for 1-2 minutes. Repeat with remaining batter.
  3. Serve pancakes with ricotta, berries and honey. Enjoy!
