Vanilla Berry Ice Cream
Ingredients
300g low fat vanilla ice cream, softened
½ cup low-fat vanilla custard
100-200g fresh or frozen mixed berries
Method
- Beat ice cream and custard in a large bowl with an electric mixer until combined.
- Gently fold in berries.
- Transfer to a cake pan or container, cover with plastic wrap, then foil, and freeze until firm.
