Vanilla Berry Ice Cream

Ingredients

300g low fat vanilla ice cream, softened
 ½ cup low-fat vanilla custard
100-200g fresh or frozen mixed berries

Method

  1. Beat ice cream and custard in a large bowl with an electric mixer until combined.
  2. Gently fold in berries.
  3. Transfer to a cake pan or container, cover with plastic wrap, then foil, and freeze until firm.
