Prawn salad with couscous

Ingredients

1 cup couscous
500g medium prawns, cooked, shelled and deveined
1 medium cucumber, chopped finely
2 tomatoes, diced finely
1 red capsicum, chopped finely
1/2 cup fresh coriander
2 cups mixed lettuce leaves

Dressing

1 tsp lemon rind
1/3 cup fresh lemon juice
2 cloves garlic, crushed
1 tbsp fish sauce
1 tbsp light soy sauce

Method

  1. Place couscous in heatproof bowl and add one cup boiling water. Leave to stand for five minutes.
  2. Drain off excess water and separate couscous with a fork so grains don’t stick together.
  3. Combine cooked couscous, prawns, cucumber, tomato, capsicum, coriander and lettuce leaves and toss thoroughly.
  4. To make dressing, combine all ingredients in a screwtop jar and shake well.
  5. Drizzle dressing over the salad just before serving and toss.
