Prawn salad with couscous
Ingredients
1 cup couscous
500g medium prawns, cooked, shelled and deveined
1 medium cucumber, chopped finely
2 tomatoes, diced finely
1 red capsicum, chopped finely
1/2 cup fresh coriander
2 cups mixed lettuce leaves
Dressing
1 tsp lemon rind
1/3 cup fresh lemon juice
2 cloves garlic, crushed
1 tbsp fish sauce
1 tbsp light soy sauce
Method
- Place couscous in heatproof bowl and add one cup boiling water. Leave to stand for five minutes.
- Drain off excess water and separate couscous with a fork so grains don’t stick together.
- Combine cooked couscous, prawns, cucumber, tomato, capsicum, coriander and lettuce leaves and toss thoroughly.
- To make dressing, combine all ingredients in a screwtop jar and shake well.
- Drizzle dressing over the salad just before serving and toss.
