Potato, Carrot and Zucchini Patties

Ingredients

2 large potatoes, peeled and grated
1 large carrot, peeled and grated
1 zucchini, peeled and grated
Pinch of salt
2 eggs
1 onion, diced
2 teaspoons dried thyme
¼ cup plain flour
½ teaspoon lemon pepper seasoning
Mixed salad leaves and lemon wedges for garnish
 

Method

  1. Mix potato, carrot, zucchini, onion and salt together. Rinse in colander and leave to drain for 15-20 minutes.
  2. In a bowl, lightly beat eggs and stir in thyme, flour and lemon pepper seasoning.
  3. Fold in drained vegetables.
  4. Spray a little light olive oil into a non-stick frying pan. Heat until hot, then add two tablespoonfuls of batter per patty, flattening tem with a spatula as they cook.
  5. Cook for 3-4 minutes each side until golden brown. Keep warm until all patties are done (should make about eight).
  6. Garnish with salad leaves and lemon wedges.
