Green Curry Chicken

Ingredients

400g chicken fillets (skin off), diced
4 teaspoons green curry paste
2 medium carrots, peeled and sliced
1 onion, chopped
95g can baby corn
1 bunch bok choy
375ml can low-fat evaporated milk
2 tablespoons coconut essence
2 cups steamed rice

Method

  1. Coat a non-stick fry pan with cooking spray and lightly cook chicken in curry paste. Remove from pan.
  2. Spray frying pan again, add carrot, onion and corn and toss for 2-3 minutes.
  3. Add bok choy and evaporated milk, stirring constantly.
  4. Serve on bed of steamed rice.
