Fish with Ratatouille

Ingredients

1 teaspoon crushed garlic
2 small onions, finely chopped
2 zucchini, sliced
1 teaspoon mixed herbs
2 tablespoons tomato purée
400g can tomatoes
Salt and freshly ground black pepper
500g steamed fish fillets

Method

  1. Cook garlic and onion in non-stick pan, add zucchini and herbs and mix well. Sauté for 2-3 minutes.
  2. Stir in tomato purée, tomatoes and seasoning. Bring to the boil then reduce heat and simmer for three minutes.
  3. Serve by placing the fish on bed of ratatouille.
